Zucchini and cheese bake

For 6 servings:
  •   3 ¼ lb zucchini
  •   1 cup crème fraiche/heavy cream
  •   3 eggs
  •   3 ½ tablespoons butter
  •   ½ cup shredded cheese
  •   freshly shredded nutmeg
  •   salt and pepper

    1. 1     Wash the zucchini but do not peel. Wipe them and cut into slices or large cubes.
    2. 2     Cook for 15-18 minutes in a saucepan ¾ full of boiling salted water. Strain through and sieve and dry them with absorbant paper to remove any remaining liquid.
    3. 3     Place the zucchini in a greased dish and mash them coarsely with a fork.
    4. 4     Beat the eggs in a bowl. Add the cream and the shredded cheese. Season with salt and pepper and sprinkle with freshly grated nutmeg.
    5. 5     Pour the mixture over the zucchini and mix it in. Cook in a hot oven for 15 minutes to brown.
    Finishing touches... Excellent served with grilled pork ribs and a glass of red wine
