For 6 servings:
3 ¼ lb zucchini
1 cup crème fraiche/heavy cream
3 eggs
3 ½ tablespoons butter
½ cup shredded cheese
freshly shredded nutmeg
salt and pepper

Wash the zucchini but do not peel. Wipe them and cut into slices or large cubes.

Cook for 15-18 minutes in a saucepan ¾ full of boiling salted water. Strain through and sieve and dry them with absorbant paper to remove any remaining liquid.

Place the zucchini in a greased dish and mash them coarsely with a fork.

Beat the eggs in a bowl. Add the cream and the shredded cheese. Season with salt and pepper and sprinkle with freshly grated nutmeg.

Pour the mixture over the zucchini and mix it in. Cook in a hot oven for 15 minutes to brown.
