For 6 servings:
  •   1 cup water
  •   3 ½ oz butter
  •   2/3 cup flour
  •   6 oz of Swiss cheese, diced
  •   5 eggs (or 4 large eggs)

    1. 1     Preheat the oven to 400°F/200°C/gas mark 6.
      Heat the water and the butter in a saucepan

    3. 2     When it reaches boiling point, add the flour and stir well until it forms a dough.

    5. 3     Remove from heat and add the beaten eggs one by one. Make sure each egg is thoroughly mixed in before adding the next one.

    7. 4     Add pepper to taste. Mix in the Swiss cheese.

    9. 5     Using two spoons, place small heaps of the mixture on a non-stick tray. Each one should be roughly the size of a large walnut. Alternatively, use a piping bag.

      Bake in the oven for approximately 30 minutes. When they are cooked, turn off the oven, open the door slightly and leave to stand for a few minutes. This ensures they are cooked inside and don’t collapse.
    Finishing touches... Serve hot or cold as a starter with salad or simply as an appetizer.
