The ham steaks correspond to the wide part of a pig's thigh, cut into slices with the bone in the middle. They are often difficult to find but if you can, I thoroughly recommend this simple recipe. "

For 8 servings:
3 ¼ lb ham steak
12 average sized potatoes
12 garlic cloves
thyme
¼ cup of water
oil
salt and pepper

Fry the ham steak on a high heat for 10 minutes with a little oil to brown both sides.

Place the ham steak in a large oven dish. Season with salt and pepper and sprinkle with thyme.

Arrange the garlic cloves (unpeeled) around the steak. Add the water and leave to cook for just under 2 hours at 190°C/370°F.

After 50 minutes remove the meat from the oven and arrange the potatoes, cut into triangular chunks, around the steak. Put the dish back in the oven and leave to cook for a further 70 minutes.

While the meat is cooking, spoon over the cooking juices at regular intervals and add a small amount of hot water if necessary.

Arrange the meat, garlic and potatoes on a serving dish. Serve with gravy from the oven dish.
