For 6 servings:
  •   ¾ cup flour
  •   1/3 cup corn starch
  •   3 eggs
  •   5 tablespoons butter
  •   4 tablespoons rum
  •   2 tablespoons vanilla sugar
  •   1 tablespoon fine granulated sugar
  •   1 pinch of fine salt
  •   ½ tablespoon baking powder
  •   1 finely shredded lemon peel
  •   confectioner’s sugar

    1. 1     Mix together the flour, cornflour, sugars and salt.

      Gradually add the eggs, the softened butter and the rum.
    2. 2     Dust your hands with flour and knead the mixture into a thick dough, folding in the baking powder and lemon rind.

      Don’t knead for too long.
    3. 3     Sprinkle flour on a pastry board and roll out the dough into a thin sheet.

      Cut out various shapes, such as squares, circles, ovals, stars and strips.
    4. 4     Dip the donuts one by one in a pan of hot oil.

      Turn them until golden on both sides. Cool on paper towels and dust with confectioner’s sugar.
    5. 5     Serve hot or cold.
    Finishing touches... I usually make my own confectioner's sugar by grinding granulated sugar in an electric coffee grinder.
