For 6 servings:
¾ cup flour
1/3 cup corn starch
3 eggs
5 tablespoons butter
4 tablespoons rum
2 tablespoons vanilla sugar
1 tablespoon fine granulated sugar
1 pinch of fine salt
½ tablespoon baking powder
1 finely shredded lemon peel
confectioner’s sugar

Mix together the flour, cornflour, sugars and salt.
Gradually add the eggs, the softened butter and the rum.

Dust your hands with flour and knead the mixture into a thick dough, folding in the baking powder and lemon rind.
Don’t knead for too long.

Sprinkle flour on a pastry board and roll out the dough into a thin sheet.
Cut out various shapes, such as squares, circles, ovals, stars and strips.

Dip the donuts one by one in a pan of hot oil.
Turn them until golden on both sides. Cool on paper towels and dust with confectioner’s sugar.

Finishing touches...
I usually make my own confectioner's sugar by grinding granulated sugar in an electric coffee grinder. |
