For 6 servings:
½ green cabbage
3 leeks
1 stick celery
2 carrots
6 tomatoes
3 onions
3 peppers
1 turnip
3 garlic cloves
1 herb bouquet
1 potato
salt
pepper

Prepare and finely chop all the ingredients.

Put all the ingredients into a large stewpot, cover with water and season with pepper. Cover and cook for approximately one and a half hours.

After 90 minutes, remove from the heat and blend the soup in a food processor for about 2 minutes and season with a little salt.

Finishing touches...
Serve as a light snack, hot or cold. |
