There are a number of recipes for madeleines. I have tried many of them and my husband and I find this one is by far the best. "

For 4 servings:
  •   9 tablespoons slightly salted butter
  •   2 eggs
  •   ¼ cup brown sugar
  •   ¼ cup granulated sugar
  •   ¾ tablespoon honey
  •   ½ cup flour
  •   3 tablespoons ground almonds
  •   1/3 tablespoon baking powder
  •   natural vanilla extract

    1. 1     Fry the butter until it turns brown.
    2. 2     Gently beat together the egg, the sugar, the salt and the honey in a mixing bowl. Add the natural vanilla extract.
    3. 3     Sieve the flour and gently stir the flour, the ground almond and the baking powder into the mixture.
    4. 4     Add the melted butter and mix thoroughly.
    5. 5     Leave to stand 2-3 hours in the refrigerator.
    6. 6     Pour the mixture into greased cake pans and cook in an oven preheated to 180°C/350° F for 15-20 minutes, depending on your oven.
