For the coulis:
Peel the mango and cut into chunks. Sprinkle with a little lemon juice.
Mix for a few seconds in the blender.

Squeeze the lemon.
Mix the water, the lemon juice and the sugar in a shaker or a small bowl.

Pour the lemon juice and sugar mixture into the blender with the mango. Mix together.The coulis is now ready!

Line up the glasses. In each glass, put a spoonful of honey, a layer of cream cheese and a layer of coulis. Add another layer of cream cheese and top with a final layer of coulis.

Refrigerate and serve chilled.

Before serving, you could also crush a meringue over the top of each glass.
Finishing touches...
Equally as delicious is strawberry coulis or indeed any other fruit. For the strawberry coulis, you will need about 17 oz of strawberries, half a lemon, 2 cups of water and ½ cup sugar. The quantities are pretty much the same.
