Although there are countless nougat recipes around, this one is delicious and easy to make "

For 1 servings:
2/3 cup of a dry fruit or nut mix (or a combination of the two)
2 egg whites
1 pinch salt
¾ cup of honey
¼ cup soft butter
2 cups sugar
1 tablespoon vanilla extract
green or red food coloring (optional)

In a bowl or heat-proof dish, whisk the egg whites and the salt to form stiff peaks. Half-way through, add a tablespoon of sugar. Put to one side.

Pour the rest of the sugar and the honey into a saucepan of water. Bring to the boil. Cook until the candy thermometer reads 290°F/140°C.

Clean the sides of the saucepan regularly with a brush dipped in cold water to prevent the sugar from caramelizing.

When the mixture reaches the required temperature, gently trickle the sugar into the egg whites, stirring all the time. Add the vanilla extract and continue to stir vigorously for approximately one minute. Add coloring if desired.
Put on a low heat over a pan of simmering water until the mixture dries out. Stir constantly with a wooden spoon, making sure it does not burn. When the mixture starts to come away from the bottom of the bowl, remove it from the heat.

Mix in thoroughly the butter and the nut/dried fruit mixture. Where possible, use a wooden spatula as the mixture will still be very hot. Lay a piece of food wrap inside a cake tin and place the nougat on top, pressing it in with your hand to level it out.

Place a board on top of the tin and a heavy wait on the board. Leave to cool. When the nougat is cool, cut into squares or strips.

Finishing touches...
If possible, use an electric knife to cut the nougat. |
