For 8 servings:
2/3 cup flour
½ cup granulated sugar
½ tablespoon baking powder
2 teaspoons dried cinnamon
3 eggs
9 tablespoons butter
2 apples
3 tablespoons raisins
3 tablespoons rum
3 ½ tablespoons flaked almonds

Preheat the oven to 180°C/350°F/gas mark 6. Grease and flour a deep cake pan, approximately 10 inches in diameter. Slowly melt the butter in a pan or in the microwave

Mix together the flour, cinnamon, sugar and baking powder. Add the eggs one by one and finally the melted butter.

In a frying pan, without oil or butter, lightly grill the flaked almonds. Stir regularly and do not leave as they will burn very easily.

Peel and quarter the apples, removing the core and pips. Chop the quarters into small cubes. Add them to the mixture along with the almonds and the raisins soaked in rum along with their juice.

Pour the mixture into the cake pan and cook in the oven for 30 minutes. Check it is cooked by inserting a knife into the center of the cake. If it comes out clean, the cake is cooked.

Finishing touches...
Where possible, soak the raisins in the rum well in advance. The longer they soak, the better they taste! |
