For 6 servings:
For the avocado and coconut mousse
2 avocados
juice of one lemon
2 tablespoons of shredded coconut
2 tablespoons heavy cream
salt and pepper
For the sun-dried tomato and feta mousse:
5 sun dried tomatoes
½ tub feta cheese in oil
2 tablespoons of heavy cream
5 fresh basil leaves
salt and pepper
For the artichoke mousse:
1 jar of marinated artichoke hearts
1 tablespoon of basil pesto
2 tablespoons of heavy cream
1 tablespoon of shredded cheese
salt and pepper

How to make the avocado and coconut mousse:
Mix the avocados with the lemon juice, coconut and heavy cream. Season to taste.

Mix together the tomatoes, feta, heavy cream and chopped basil leaves. Season to taste.
