For 2 servings:
  •   4 carrots
  •   1 teaspoon of cumin powder
  •   juice of half a lemon
  •   fresh coriander
  •   3 garlic cloves
  •   olive oil

    1. 1     Chop the carrots into small disks.
    2. 2     Boil some water in a pan. Add the carrots and cook for approximately 15 minutes.
    3. 3     Drain the carrots in a colander and fry them in a pan with a dash of hot olive oil. Add the cumin and lemon juice. Mix together and remove from heat. Add the coriander and the garlic cloves.
    4. 4     Leave to cool in the pan to let the flavors mingle. Stir occasionally.
    Finishing touches... Serve at room temperature
