For 2 servings:
4 carrots
1 teaspoon of cumin powder
juice of half a lemon
fresh coriander
3 garlic cloves
olive oil

Chop the carrots into small disks.

Boil some water in a pan. Add the carrots and cook for approximately 15 minutes.

Drain the carrots in a colander and fry them in a pan with a dash of hot olive oil. Add the cumin and lemon juice. Mix together and remove from heat. Add the coriander and the garlic cloves.

Leave to cool in the pan to let the flavors mingle. Stir occasionally.
