For 6 servings:
1 lb, 5oz turkey
2 carrots
1 lb 12oz tomatoes
1 large onion
½ bunch of fresh coriander
1 small can of corn
2 tablespoons tomato puree
½ teaspoon sugar
3 tablespoons oil
1 tablespoon vinegar
1 pinch of chilli powder
salt and pepper

Wash the coriander and remove the leaves. Keep 6 sprigs for the garnish and chop the rest. Peel the carrots and cut into chunks. Peel and chop the onion.

Remove the stalks from the tomatoes, peel them, cut them in half and remove the seeds. Mix the tomatoes in a blender.

Cut the meat into cubes. Heat the oil in a wok and cook the meat and the onions until brown. Remove from the heat and put to one side.

Put the tomato puree, the vinegar and sugar in the wok. Heat for one minute, stirring regularly. Pour in the tomato coulis and add the carrots, corn and chilli powder. Season with salt and pepper and cook on a medium heat for 20 minutes.

Return the meat to the pan and heat for 5 minutes. Remove from heat and add the chopped coriander.

Serve in bowls and garnish with coriander.
