For 4 servings:
  •   1 sheet of puff pastry
  •   3 eggs
  •   2/3 cup heavy cream
  •   ½ floret of broccoli
  •   ½ onion
  •   3 ½ oz smoked salmon
  •   ½ cup of shredded cheese
  •   1 tablespoon of butter
  •   salt and pepper

    1. 1     Preheat the oven to 375°F/ 190°C. Roll out the pastry and place in a cake pan.
    2. 2     Blanche the broccoli for a few minutes in boiling water. Strain and cut into chunks.
    3. 3     Cut the smoked salmon into small bits. Slice the onion and cook with the butter. Leave to cool.
    4. 4     Mix the eggs, heavy cream and cheese in a bowl. Season with salt and pepper.
    5. 5     Spread the onion, broccoli and smoked salmon evenly over the pastry base. Gently pour over the egg, cream and cheese mixture.
    6. 6     Cook in the oven for 35-45 minutes, depending on the oven.
    Finishing touches... I used four small cake tins for this quiche. If the smoked salmon is salted, you won't need to add too much salt. You can adjust the quantities of cheese as desired. Alternativey, the salmon can be replaced with diced bacon.
