For 4 servings:
4 apples
1 banana
flaked coconut
1 pie crust
2 tablespoons vanilla sugar

Preheat the oven to 180°/350° F. Peel the apples and cut into slices. Unroll the pastry and put it in a cake pan on top of a sheet of wax paper. Pierce holes in the pastry using a fork. Cut the banana into slices.

Arrange the banana slices evenly across the base of the pie crust, followed by a second layer of apples. Sprinkle over 2 tablespoons of vanilla sugar. Fold over the edges of the pastry, gathering them together.

Bake in the oven for 30 minutes. 5 minutes before the end, sprinkle with flaked coconut. Return to oven for the last 5 minutes and serve. The bananas should be slightly mushy.

Finishing touches...
Serve hot, warm or chilled. You can also lightly fry the apples in a little butter and sugar before putting them in the dish. |
