For 4 servings:
lardons or bacon, cut into strips
shredded cheese
4 large potatoes
1 onion
1 bell pepper
butter
salt and pepper

Boil the unpeeled potatoes and fry the bacon, the pepper and the onion in a frying pan.

When the potatoes are cooked, cut them into two and scoop out half of the potato from each half.

Remove the bacon, onion and bell pepper from the heat and mix with the scooped out potato. Add a knob of butter. Season to taste.

Spoon the mixture into the hollow of the potato halves and sprinkle with shredded cheese.

Put in the oven for 5-10 minutes or until the cheese melts.
