For 6 servings:
  •   2 ½ lb veal, diced.
  •   4 onions
  •   3 garlic cloves
  •   2 apples
  •   1/3 cup raisins
  •   2 tablespoons flaked coconut
  •   1 ¾ cups coconut milk
  •   Just under ½ cup cream
  •   5 tablespoons curry powder
  •   3 tablespoons oil
  •   Salt and pepper
  •   Chilli powder

    1. 1     Peel and finely chop the onions and brown them in a saucepan for 5 minutes with the oil, the curry and the crushed garlic.
      Add the meat and continue to cook for 3 minutes, stirring constantly.
    2. 2     Add the coconut milk, raisins, salt, pepper and chilli powder as well as the apples, quartered. Cover and leave to simmer for 50 minutes.

    4. 3     Just before serving, add the coconut and cream and leave to simmer for 2 minutes to thicken the sauce.
    Finishing touches... Serve with basmati rice and season with pepper.
