For 6 servings:
2 ½ lb veal, diced.
4 onions
3 garlic cloves
2 apples
1/3 cup raisins
2 tablespoons flaked coconut
1 ¾ cups coconut milk
Just under ½ cup cream
5 tablespoons curry powder
3 tablespoons oil
Salt and pepper
Chilli powder

Peel and finely chop the onions and brown them in a saucepan for 5 minutes with the oil, the curry and the crushed garlic.
Add the meat and continue to cook for 3 minutes, stirring constantly.

Add the coconut milk, raisins, salt, pepper and chilli powder as well as the apples, quartered. Cover and leave to simmer for 50 minutes.

Just before serving, add the coconut and cream and leave to simmer for 2 minutes to thicken the sauce.

Finishing touches...
Serve with basmati rice and season with pepper. |
