For 4 servings:

For approximately 30-40 small cookies

  •   3 ˝ oz roquefort (blue cheese)
  •   ˝ cup flour
  •   3 oz butter
  •   1 tablespoon dry polenta

    • Preparation

    1. 1     Mix together all the ingredients in a bowl until they come together in a dough.
    2. Roquefort Cookies
    3. 2     Roll the dough into 4 small sausages, approximately 4 inches long and 2 inches wide.
      Wrap them up in saran wrap and refrigerate for one hour.
    4. 3     Once you have taken them out of the refrigerator, remove the saran wrap and cut into disks approximately ˝ inch thick.
    5. 4     Place the slices on a layer of wax paper and bake in the oven for 20 minutes at 350°F/180°C.
    6. 5     Leave to cool on a wire rack.
    Finishing touches... The cookies will keep for up to three days in a sealed cookie jar.
