For 4 servings:
For approximately 30-40 small cookies
3 ˝ oz roquefort (blue cheese)
˝ cup flour
3 oz butter
1 tablespoon dry polenta

Mix together all the ingredients in a bowl until they come together in a dough.

Roll the dough into 4 small sausages, approximately 4 inches long and 2 inches wide.
Wrap them up in saran wrap and refrigerate for one hour.

Once you have taken them out of the refrigerator, remove the saran wrap and cut into disks approximately ˝ inch thick.

Place the slices on a layer of wax paper and bake in the oven for 20 minutes at 350°F/180°C.

Leave to cool on a wire rack.

The cookies will keep for up to three days in a sealed cookie jar. |
