A delicious sweet and crunchy onion tart. "

For 6 servings:
1 package puff pastry
1 lb 5oz onions
3 tablespoons honey
¼ cup cider vinegar
3 tablespoons butter
2 pinches of allspice
salt and pepper

Peel the onions and cut them into thick slices. Drop them into a pan of boiling salty water, leave to cool and strain.

Brown the onions in a pan with the butter. Add the honey, salt, pepper and allspice.

Stir and cover. Leave to cook on a low heat for about 20 minutes, until the onions begin to caramelise. If the onions stick to the side of the pan, add a little water.

Add the vinegar and leave on the heat with the lid off to allow the liquid to evaporate.

Heat the oven to 350°F/180°C. Spread the onions evenly over a greased dish and place the sheet of pastry over the onions. Press the edges down with your fingers.

Turn the pan upside down and remove the tart. Serve with a side salad.
