For 4 servings:
24 large wild shrimps, uncooked
2 garlic cloves
1 shallot
1 teaspoon coriander seeds
1 teaspoon of dried green pepper
1 fresh coriander plant, with roots if possible.
3 tablespoons of plain oil

Carefully shell and devein the shrimps, leaving a small part of the shell on the tail for decoration.

Finely chop one garlic clove and the roots and stems of the coriander plant. Grind together in a mortar with 1 tablespoon of oil. Mix with the prawns and leave to soak for one hour in a cool place.

Fry the remaining garlic clove with the shallot and one tablespoon of oil in a wok, stirring constantly to prevent them from burning. Cook until golden and put to one side.

Heat one tablespoon of oil in the wok. When it is hot, sauté the shrimps for 2-3 minutes, stirring constantly. Add the fried garlic and shallot and cook for a further few seconds. Sprinkle with the chopped coriander and serve immediately.

Finishing touches...
The shrimps can be accompanied by stir fried Chinese noodles. Served alone or with a green salad, this is an excellent appetizer for any dinner party. |
