For 4 servings:
  •   24 large wild shrimps, uncooked
  •   2 garlic cloves
  •   1 shallot
  •   1 teaspoon coriander seeds
  •   1 teaspoon of dried green pepper
  •   1 fresh coriander plant, with roots if possible.
  •   3 tablespoons of plain oil

    1. 1     Carefully shell and devein the shrimps, leaving a small part of the shell on the tail for decoration.
    2. Shrimps sautéed with green pepper and coriander
    3. 2     Finely chop one garlic clove and the roots and stems of the coriander plant. Grind together in a mortar with 1 tablespoon of oil. Mix with the prawns and leave to soak for one hour in a cool place.
    4. 3     Fry the remaining garlic clove with the shallot and one tablespoon of oil in a wok, stirring constantly to prevent them from burning. Cook until golden and put to one side.
    5. Shrimps sautéed with green pepper and coriander
    6. 4     Heat one tablespoon of oil in the wok. When it is hot, sauté the shrimps for 2-3 minutes, stirring constantly. Add the fried garlic and shallot and cook for a further few seconds. Sprinkle with the chopped coriander and serve immediately.
    Finishing touches... The shrimps can be accompanied by stir fried Chinese noodles. Served alone or with a green salad, this is an excellent appetizer for any dinner party.
