For 5 servings:
1 cup baking chocolate
7 tablespoons butter
7 tablespoons sugar
3 eggs
1 tablespoon flour
3 tablespoons crème fraiche/heavy cream
¼ cup shredded coconut
5 squares of coconut flavored white chocolate

Melt the chocolate over a saucepan or in the microwave.

Remove from heat, add the egg yolks, flour, cream, sugar and shredded coconut.

Beat the egg whites to form stiff peaks and add them to the mixture.

Half fill the individual cake cups with the mixture. Place a square of white chocolate on top of each one and pour over the other half of the mixture. Cook at 230°C/450°F for 20 minutes.

Finishing touches...
Turn out while still hot and serve with custard or a scoop of vanilla ice cream. |
