For 4 servings:
1 cup flour
½ lemon
3 eggs
¼ cup granulated sugar
3 ½ tablespoons butter
1 tablespoon rum
1 tablespoon vanilla sugar
Pinch of salt
cooking oil
sugar

In a bowl, mix together the softened butter and the sugar. Add the salt, the stiffly beaten egg whites, the rum and the vanilla sugar. Finally, add the flour and mix thoroughly. Work the dough into a ball.

Knead the dough for 5 to 10 minutes, making sure it doesn’t stick.

Cover with Saran wrap or a tea towel and leave to stand overnight in a cool place.

Roll the pastry as thinly as possible and cut into rectangles. Drop into hot cooking oil and remove once they have swelled.

Drain the fritters on absorbant paper and sprinkle with sugar.
