Ham and cheese muffins

For 6 servings:
  • 7 tablespoons of flour
  • ½ tablespoon of baking powder
  • 2 whole eggs
  • 1 natural yogurt
  • 3 tablespoons of oil
  • 3 ½ oz ham in strips or cubes
  • ¾ cup of shredded cheese
  • salt and pepper

    • Preparation

    1. 1     Preheat the oven to 180°C/356°F/gas mark 4.
      Beat the eggs and season lightly with the salt and pepper. Add the flour, the baking poweder, the yogurt and the oil and whisk the ingredients together.
    2. 2     Mix in the shredded cheese and the ham.
    3. 3     Divide the mixture between 6 pre-greased muffin tins until they are each 2/3 full. Bake in the oven for 20 minutes or until the muffins have expanded and turn a lovely golden colour.
    Finishing touches... The shredded cheese can be replaced with parmesan.
