For 6 servings:
10 large tomatoes
6 fresh basil leaves
½ cup parmesan
9 tablespoons butter, diced
1 cup flour
1 garlic clove
salt and pepper

With a fork or spatula, crush the tomatoes and finely chop the garlic clove. Mix together and add the basil, roughly chopped. Season with salt and pepper and leave to marinate for one hour in the refrigerator.

Using your hands, mix together the flour, parmesan and butter until it resembles fine breadcrumbs. Leave to stand.

In individual cake tins, spread a layer of the marinated tomato mixture and sprinkle over the crumble topping.

Cook in the oven for 20 minutes at gas mark 7/ 425° F/220°C.
