Bell pepper omelet

For 1 servings:
  • 1 small green bell pepper
  • 1 small red bell pepper
  • 1 onion
  • 2 eggs
  • 2 handfuls of shredded cheese
  • olive oil
  • Pepper
  • ground cumin

    • Preparation

    1. 1     Heat the oil in a frying pan. Peel and finely chop the onion and place in the frying pan.
      Wash the bell peppers, remove the inside and cut into small cubes. Add to the frying pan with the onions. Sprinkle with pepper and cumin, cover and cook on a medium heat.
    2. 2     When it is almost cooked, heat some olive oil in another, smaller, frying pan.
    3. 3     Beat the two eggs in a bowl and season with pepper. Mix in the
      onion and peppers, making sure they are well covered. Add the mixture to the small frying pan.
    4. 4     When the bottom side is cooked, turn the omelette onto a plate. Lower the heat and put the first handful of shredded cheese in the pan and put the omelet cooked side up
      back in the pan on top of the cheese. When the other side is cooked, repeat the operation, removing the omelet from the pan with the aid of a plate, putting the second handful of shredded cheese in the pan and putting the other side (the side you cooked first) face down on the cheese.
