For 6 servings:
  • 2/3 cup flour
  • 2/3 cup granulated sugar
  • 2 eggs
  • 1 stick melted butter
  • 1 natural yogurt
  • 1 tablespoon yeast
  • a pinch of salt
  • ½ cup shredded coconut

    • Preparation

    1. 1     Preheat the oven to 180°C at 180°C/356°F/gas mark 4.
    2. 2     Whisk together the sugar and the eggs, adding the flour, yeast, salt, yogurt and finally the melted butter. Stir in the shredded coconut and mix thoroughly.
    3. 3     Pour the mixture into muffin tins until they are about 2/3 full.
      Bake in the oven for 20 minutes or until golden brown.
    Finishing touches... You can also add bits of fruit such as pineapple, pear or banana or alternatively chocolate drops.
