For 6 servings:
2/3 cup flour
2/3 cup granulated sugar
2 eggs
1 stick melted butter
1 natural yogurt
1 tablespoon yeast
a pinch of salt
½ cup shredded coconut

Preheat the oven to 180°C at 180°C/356°F/gas mark 4.

Whisk together the sugar and the eggs, adding the flour, yeast, salt, yogurt and finally the melted butter. Stir in the shredded coconut and mix thoroughly.

Pour the mixture into muffin tins until they are about 2/3 full.
Bake in the oven for 20 minutes or until golden brown.

Finishing touches...
You can also add bits of fruit such as pineapple, pear or banana or alternatively chocolate drops. |
