For 8 servings:
  • 10 ½ oz pumpkin
  • 2/3 cup granulated sugar
  • 1 stick softened butter
  • 7 tablespoons flour
  • ½ cup shredded coconut
  • 3 eggs
  • 1 tablespoon of baking powder
  • a pinch of salt
  • the rind of 1 lemon

    1. 1     In a bowl, mix the pumpkin with the softened butter.
    2. 2     In another bowl, mix the sugar, flour, baking powder, eggs, shredded coconut,and the lemon rind.
    3. 3     Stir in the pumpkin and butter until the mixture is smooth.
    4. 4     Pour the mixture into a greased deep cake pan.
    5. 5     Cook in the oven for 40 minutes at 375 degrees F/190 degrees C/gas mark 5.
    6. 6     If you can, wait until cooked to fully appreciate the delicious taste!
    Finishing touches... To share with friends and family. Let them try and guess what’s in this recipe. Most will guess the lemon or the coconut but few will taste the pumpkin !
