The zuchhni bake par excellence "

For 4 servings:
4 zucchini
3 garlic cloves
1 onion
3 eggs
˝ cup parmesan
˝ cup light cream
˝ cup milk
salt and pepper

Cut the zucchini into slices and sprinkle with cooking salt. Leave to stand in the salt for one hour.

After one hour, rinse the zucchini and wipe them dry. Take half of the zucchini and cut them into small cubes. Place them in a frying pan and cook on a high heat with a dash of olive oil, finely chopped onion and crushed garlic until brown.

Mix together the eggs, the milk and the cream and season with salt and pepper. Mix in the remaining zucchini and finally the cooked zucchini, onion and garlic.

Pour a dash of olive oil into a gratin dish, sprinkle over a little parmesan and pour the mixture into the dish. Sprinkle with parmesan.

Cook in an oven preheated to 220°C/430°F/gas mark 7 for 20 to 25 minutes.
