Zucchini bake

For 4 servings:
  • 4 zucchini
  • 3 garlic cloves
  • 1 onion
  • 3 eggs
  • ˝ cup parmesan
  • ˝ cup light cream
  • ˝ cup milk
  • salt and pepper

    • Preparation

    1. 1     Cut the zucchini into slices and sprinkle with cooking salt. Leave to stand in the salt for one hour.
    2. 2     After one hour, rinse the zucchini and wipe them dry. Take half of the zucchini and cut them into small cubes. Place them in a frying pan and cook on a high heat with a dash of olive oil, finely chopped onion and crushed garlic until brown.
    3. 3     Mix together the eggs, the milk and the cream and season with salt and pepper. Mix in the remaining zucchini and finally the cooked zucchini, onion and garlic.
    4. 4     Pour a dash of olive oil into a gratin dish, sprinkle over a little parmesan and pour the mixture into the dish. Sprinkle with parmesan.
    5. 5     Cook in an oven preheated to 220°C/430°F/gas mark 7 for 20 to 25 minutes.
