For 4 servings:
  • 1 pound of carrots
  • 1 pound of fresh beetroot (uncooked)
  • mint
  • salt and pepper
  • oil
  • vinegar

    1. 1     Peel and shred the fresh carrots and beetroot.
    2. 2     Prepare a French dressing and add the shredded vegetables. Sprinkle with finely chopped mint.
